The wine combines dark fruit, cherry, strawberry, leather, pepper, and spice with 18 months of aging in oak barrels. As such, Les Bartavelles is a full-bodied, gastronomic Châteauneuf-du-Pape with structure, complexity, and distinct Rhône warmth.

Les Bartavelles comes from Châteauneuf-du-Pape, one of the most famous appellations of the Southern Rhône.

Location / Origin: Châteauneuf-du-Pape is located in the Southern Rhône, where sun, wind, and Mediterranean herb influences ensure powerful red wines with ripe fruit and spice.

Appellation: The wine bears the Châteauneuf-du-Pape origin and is crafted as a red Rhône blend of Grenache, Syrah, and Mourvèdre.

Wine style: Les Bartavelles is a concentrated, spicy red wine with dark fruit, firm structure, and enough complexity for rich dishes.

Name: Bartavelles means partridges. On Jean-Luc Colombo’s official wine list, the wine is designated as “Les Bartavelles,” or “The Royal Partridges.”

The vinification is focused on color, aroma, structure, and a ripe yet refined tannin profile.

Cold soak: The wine undergoes a 4-day macération préfermentaire. This cold soak before fermentation helps extract extra color, fruit aromas, and structure from the grape skins.

Fermentation: This is followed by 7 days of fermentation in steel tanks at a controlled temperature of 28 °C. This keeps the fruit bright while allowing the wine to develop sufficient power.

Maceration: After fermentation, the wine remains in contact with the skins for another 3 weeks at 30 °C. This longer maceration provides extra depth, tannin, and complexity.

Aging / Oak treatment: The wine is aged for 18 months in 1, 2, and 3-year-old oak barrels. The wood provides extra spice, structure, and a subtle roasted depth without overpowering the fruit.

Alcohol percentage: With 14.5% alcohol, this Châteauneuf-du-Pape has distinct power and volume, fitting its rich Southern Rhône style.

Les Bartavelles is a blend of three classic black grape varieties from the Rhône.

45% Syrah – Châteauneuf-du-Pape: Syrah provides dark fruit, pepper, color, structure, and spicy depth.

35% Grenache – Châteauneuf-du-Pape: Grenache brings ripe red fruit, warmth, roundness, and a soft fruit core.

20% Mourvèdre – Châteauneuf-du-Pape: Mourvèdre adds grip, dark spice, leather-like notes, and extra length to the blend.
