The Nebbiolo is selected from various municipalities within the Barolo DOCG, in the heart of the Langhe hills.

Location / Origin: The selection combines grapes from La Morra, Monforte d’Alba, and Castiglione Falletto. In doing so, Serre dei Roveri brings different facets of Barolo together into a single cuvée.

Soil: Around La Morra, blue-grey calcareous marls rich in fine clay and silt dominate, while Monforte d’Alba and Castiglione Falletto feature more sandstone and calcareous sandy soils. This combination supports both finesse and perfume as well as structure and spicy depth.

Climate & Influences: Barolo has a temperate continental climate, protected by the Alps. The combination of sunny slopes, cool nights, and a long growing season gives the late-ripening Nebbiolo sufficient time to fully develop aromas, acids, and tannins.
San Silvestro opts for a traditional vinification where extraction and long-term aging are built up gradually.

Fermentation: After destemming and crushing, the wine ferments in stainless steel tanks at 28–30 °C. The skins remain in contact with the must for 12 days, with daily remontage to gradually extract color, aroma, and tannins.

Aging / Oak maturation: The wine then matures for 26 months in large Slavonian oak barrels. Due to the size of the barrels, the influence of the wood remains subtle, giving the floral, spicy, and earthy character of the Nebbiolo full space to breathe, while the tannins slowly become softer and more harmonious.
Barolo is built entirely around Nebbiolo, a grape capable of developing both aromatic finesse and a firm structure.

100% Nebbiolo – Barolo: Nebbiolo brings cherries and other red fruits, roses, and violets, complemented by spices, liquorice, and earthy nuances. The high natural acidity and distinct tannins also provide the wine with the structure for long-term development.
