The grapes are sourced from selected vineyards around Naoussa in northern Greece, while the wine is released under the broader geographical indication PGI Macedonia.
- Location / Origin: Naoussa is located in Imathia on the eastern side of the Vermio Mountains and serves as one of the historical centers for Xinomavro. Most of the vineyards around the city are situated on the southeastern slopes of the mountain range.
- Altitude: In the wine region around Naoussa, most vineyards are located between 150 and 400 meters above sea level. The combination of altitude and hilly terrain creates distinct differences between individual plots and microclimates.
- Climate & Influences: The climate is temperate Mediterranean with continental influences, featuring cold winters and relatively warm summers. This combination supports a slow development of aromas and the characteristic fresh acidity of Xinomavro.
- Vineyard & Harvest: Cavino selects various plots in the Naoussa region and harvests the Xinomavro at the end of September.
Cavino consciously opts for a direct, unoaked vinification in which the fruit and the inherent structure of Xinomavro remain central.
- Harvest & Selection: The grapes are handled with care upon arrival before being destemmed and processed further.
- Fermentation: The must remains in contact with the grape skins throughout the entire alcoholic fermentation process. This builds color, aroma, and tannins; subsequently, malolactic fermentation takes place in stainless steel tanks, further rounding out the structure.
- Maturation / Ageing: Even after fermentation, the wine remains in stainless steel, and no oak is used. For the 2023 vintage, a maturation period of up to 12 months in stainless steel was recorded, ensuring that the focus remains entirely on fruit, spice, and natural tannin structure.
