Taoba Saperavi is more than just a wine; it's a wine that combines years of tradition and innovation. Hailing from the world's oldest wine-producing region, the Saperavi grapes ripen perfectly. The result is a full-bodied and powerful wine with just the right amount of bite.
Manual harvesting for Taoba Saperavi
Taoba's vines are planted in eastern Georgia, in the Kakheti wine region. The vines for this Saperavi wine are over 30 years old and deeply rooted in black slate soil. Thanks to the nearby Caucasus Mountains, rain is blocked and cool nights are maintained, allowing the grapes to ripen slowly. The grapes are harvested entirely by hand and taken directly to the winery. Here, some of the grapes are destemmed and macerated in stainless steel tanks. This is also where alcoholic fermentation takes place. The remaining grapes are placed whole in the qvevr, an egg-shaped earthenware vessel traditionally used in Georgia for both fermentation and aging. The wine from the stainless steel tanks is pressed and transferred to wooden barrels. Once aging is complete, the wines are blended and bottled.
