Although Puglia is primarily the domain of Italian grape varieties, Chardonnay also thrives here. This is partly due to the cool sea breeze that blows through the vineyards at night, allowing the grapes to develop the necessary freshness. This ensures that San Marzano Edda Bianco never becomes too acidic or too heavy. Harvest takes place quite early in the season, as early as mid-August. Only after a rigorous selection process—only the very best are considered for San Marzano Edda Bianco—are the grapes fermented. This is done in French oak barrels.
