Aaldering is immensely proud of the Aaldering Noble Late Harvest dessert wine, made from Sauvignon Blanc. Indeed, that fresh, vibrant Sauvignon Blanc! Due to noble rot, also known as botrytis, the grapes dry out and become overripe. Harvesting these grapes is a delicate process. A day too early and the grapes aren't ripe enough, a day too late and the entire harvest has failed. This is the first time Aaldering has succeeded in producing this truly special dessert wine. And they are incredibly proud of it.
Why is the Sauvignon Blanc grape used for this? Thanks to its refreshing acidity, a Noble Late Harvest Sauvignon Blanc grape always retains a pleasantly fresh undertone. This delicious dessert wine from Aaldering also has excellent aging potential of 10 to 15 years, provided it is stored under consistent conditions. What's also remarkable is that this wine can be kept in the refrigerator for at least three weeks after opening. This, in turn, demonstrates the quality of this exceptional wine.
And now we finally arrive at the tasting of Aaldering's pearl. The color is deep golden yellow and has a rich appearance. The aroma makes us swoon for a moment... What pleasant, delicate aromas! Beautiful notes of apricots, candied fruit, vanilla, yellow cream, and a hint of honey. The taste is perfectly balanced between sweetness and fresh acidity. Lovely nuances of yellow and tropical fruit interspersed with notes of nuts and a hint of vanilla. Perhaps even a touch of spice on the back of the tongue.
