In Burgundy, we find the Albert Bichot winery, which has existed for over 180 years. The family business is now in the hands of the sixth generation, Alberic Bichot. The winery owns vineyards in renowned Burgundy appellations, including Chablis, Meursault, Nuits-Saint-Georges, and Gevrey-Chambertin. Its high-quality Burgundy wines are renowned worldwide. The winery has built a strong reputation for this and focuses on quality and sustainability. The Chardonnay grapes for Bourgogne Aligot are selected from vineyards in Auxerre, Côte Chalonnaise, Hautes-Côtes de Beaune, and Hautes-Côtes de Nuits. These grapes are able to extract all the flavors and characteristics of the chalky clay soils. The Chardonnay grapes are rigorously selected and undergo temperature-controlled fermentation in stainless steel tanks at the winery. This takes approximately 5 to 6 weeks. The wine is then aged for 8 months in stainless steel tanks, allowing it to retain its fresh and fruity character.
