The Chardonnay grapes for Bourgogne Aligot are selected from vineyards in Auxerre, Côte Chalonnaise, Hautes-Côtes de Beaune, and Hautes-Côtes de Nuits. The Chardonnay grapes are rigorously selected and undergo temperature-controlled fermentation in stainless steel tanks at the winery. This takes approximately 5 to 6 weeks.
