12 to 16 months of wood aging for Avondale Samsara Syrah

Avondale Winery is located at the foot of the Klein Drakenstein Mountains near the Paarl Valley. At the helm is Johnathan Griever, a true pioneer in sustainable wine. Everything revolves around Mother Nature. The grapes are grown biodynamically, and all the wines are certified organic. The result is superb, top-quality wines. The grapes benefit from the warm weather, but the water flowing down from the mountain waterfalls naturally cools them. This allows the grapes to ripen optimally and develop their unique characteristics. The grapes are harvested early in the morning to preserve all their characteristics. Ten to 15 percent is fully fermented, which gives the wine a unique body and length. The remainder is carefully removed and then placed in tanks for two to three days before natural fermentation can begin. Because the grapes are very healthy, fermentation is followed by a long maceration period of 25 to 30 days. The wine was aged in barrels for 12 to 16 months and lightly filtered before bottling.
