Bellingham is the first winery in South Africa to dare to work with the Shiraz grape. This small and concentrated grape is not easy to cultivate. Because Bellingham was the first to temper this grape and was also successful in doing so, Bellingham certainly has a reputation to uphold. The Shiraz grapes for this red wine are planted on the northern and eastern foothills of the Simonsberg. This soil has an ideal granite composition. The hand-harvest for this red wine begins in early March. By then, the grapes have had ample time to fully develop. After pressing and malolactic fermentation, the wine is then aged for 12 months in French oak barrels.
