Description

The Castelgreve Vin Santo originates in the heart of Tuscany. With its centuries-old tradition and unique production method, this wine is a true specialty. The name Vin Santo carries a spiritual meaning, as it literally means "holy wine." In the past, this wine was even used as sacramental wine, giving it a special status. It pays tribute to the deeply rooted traditions and respect for artisanal craftsmanship. Vin Santo is made from the Malvasia bianco and Trebbiano grape varieties.

The special vinification process of Castelgreve Vin Santo

Vin Santo wine isn't produced every year, but only in the most exceptional vintages, when the grapes are optimally ripe. After the careful harvest, the grapes aren't pressed immediately; instead, the whole vines are used. These vines are hung in a special barn for 3 to 4 months, where they are exposed to air and dried. This drying process is crucial to the creation of Vin Santo. As the grapes dry, they lose significant moisture, resulting in a concentrated juice with a high flavor intensity. Simultaneously, the sugar content of the grapes increases, contributing to the wine's natural sweetness. After the drying process, the grapes are gently pressed, and the resulting juice is transferred to small wooden barrels. Here begins the aging process, which lasts for at least 3 years. During this period, the wine rests in barrels made of various types of wood, such as oak, cherry, and chestnut. Each type of wood adds its own unique character and subtleties to the Vin Santo, creating a wonderful complexity.
