Oh my, oh my, life can be so good with this white Château de Chamirey Mercurey in your glass. Because the world stands still for a moment when you're tasting it! The Chardonnay grapes are harvested very selectively and then aged in oak, and you can taste it! The grapes come from six different plots. The diversity and distinctive character of each plot is expressed in this Mercurey Blanc. Most of the plots have clay-limestone soils, which are predominantly limestone.

Manual harvest for Chateau de Chamirey Mercurey White

The story of Domaine Devillard began in 1934, when the Marquis de Jouennes d'Herville decided to bottle his wines on the estate, first in Mercury. Since 2005, his grandchildren have run Château de Chamirey, supported by their father, Bertrand Devillard. The estate has now grown to 37 hectares. Besides this château, the Devillards also manage several estates in Burgundy and beyond, including Domaine de la Ferté in Givry and the prestigious Domaine des Perdrix in the Côte de Nuits. The grapes are harvested by hand to ensure their quality. After harvesting, the grapes are sorted by hand and partially destemmed before pressing. This is followed by maceration for 12 to 24 hours. This is followed by alcoholic fermentation at a temperature between 14 and 18 degrees Celsius in wooden or stainless steel barrels, depending on the aromatic profile. The wine is aged for ten months after fermentation. And then it's time to enjoy this delicious wine!
