Following the 3 Passo principle, Cielo e Terra selects Italian vineyards that are particularly suitable for viticulture and where organic farming is the norm. The combination of warm days and cooler nights in Puglia ensures that the grapes reach sufficient ripeness while retaining the freshness in the wine.
At 3 Passo Bianco, Cielo e Terra operates according to three distinct steps that together define the wine's style. First, only organic grapes are selected from the best plots and harvested at the right time to ensure optimal ripeness. Then, a portion of the harvest is deliberately dried further on the vine or after harvesting, increasing the concentration of aromas and flavors. Finally, the skins are macerated for extended periods, a phase in which the juice and skins maintain extended contact to build structure and depth of flavor. After this, the wine is vinified using a fully vegan process. The result is an organic white wine with abundant aromas, body, and a soft texture, made without the use of animal-derived fining agents.
