Description
The Pinto Noir grape is well-known in France and has become famous in Burgundy. Just like the winemaker at Couveys, who also grew up in the southern French wine region. With extensive experience and a rich history, he has now found a vineyard in the Pays d'Oc. In the south, on a high-altitude vineyard, the Pinot Noir grapes for these red Couveys are grown. The climate there is cool, yet abundant sunshine, similar to Burgundy. The fresh mountain breeze cools the grapes during hot weather, as temperatures can rise quickly in the south of France. The final harvest is excellent and is harvested in the middle of the night to prevent damage and bruising to the Pinot Noir bunches.
Wood aging for the Couveys Pinot Noir
After the harvest, the grapes are selected again on sorting tables, ensuring only the finest bunches are bottled. But before that happens, a third of the wine is aged in oak barrels.
