The Creation Sauvignon Blanc is a beautiful white wine from this South African winery. Thanks to the cool climate and the proximity of the Atlantic Ocean, the grapes develop a beautiful balance between ripe fruit and crisp acidity. And that balance is perfectly captured in this bottle from Creation Estate. This Sauvignon Blanc is made entirely from Sauvignon Blanc grapes, carefully harvested by hand.

The young winery Creation Estate

In 2002, Jean Claude and Carolyn Martin took on the challenge of opening a winery in a remote corner of the Walker Bay Wine Region. It must have been exciting, as vines had never been planted there before. Both grew up in wine-loving families and, armed with the necessary knowledge, were determined and convinced of the area's potential. Together, they founded Creation Estate in the picturesque Hemel-en-Aarde Valley. Five years later, the first harvest took place, requiring the very best equipment in the cellar. Since then, they have been working hard to achieve a reputation for producing high-quality wines.

The harvest and taste of Creation Sauvignon Blanc

The winery now owns fifty hectares of vineyards in the Hemel-en-Aarde Valley. According to the winemakers, it's all about the quality of the grapes, not about any tricks they can pull off. And the quality is certainly good. The combination of higher-elevation vineyards near the Atlantic Ocean creates a unique microclimate in Walker Bay, allowing the grapes to fully benefit from this. After careful harvesting, the grapes are pressed. Fermentation takes place in stainless steel tanks at a controlled temperature of fifteen degrees Celsius. The crisp freshness is so characteristic of Sauvignon Blanc, which is why malolactic fermentation is avoided. After this, the wine remains on the lees for another five months. This gives the wine a slightly rounder flavor. The result is a refined Sauvignon Blanc with a lively freshness. The aroma offers hints of tropical fruit and mineral notes, as if the summer sun is streaming from the glass. The palate is refreshing with notes of gooseberry, green apple, and pear! Beautifully refined and with a wonderfully fresh finish. A delicious white wine, this Creation Sauvignon Blanc.
