The grapes grow in the far north of Victoria, once an arid landscape, but for almost a century the cradle of Australian agriculture. Merlot grapes ripen slowly in this wine region with its extreme weather conditions. Due to the intense heat, the grapes develop flavors only slowly. This is also why the Deakin winemakers wait so long to harvest their Merlot grapes. After harvest, the grapes are gently pressed. Then, some of the grapes are fermented in stainless steel tanks and some in oak barrels. This type of fermentation gives Deakin Estate Merlot its necessary character, making it an unforgettable wine.
