Saffredi has been produced since 1987 and is an icon for Fattoria Le Pupille. The wine is dedicated to Fredi, who inspired Elisabetta Geppetti's mentor and her passion for wine. It receives a remarkable 98 points from Parker. That's quite something. This is the showpiece, jewel, crowning glory, whatever you want to call it, of Fattoria Le Pupille. The vineyard for this top-notch wine grows 250 meters above sea level and is very small: just 5 hectares. But large enough to produce such quality wines.
A special blend for Fattoria Le Pupille Saffredi
Saffredi is vinified from 55 percent Cabernet Sauvignon, 30 percent Merlot, and 15 percent Petit Verdot. The grapes thrive in the vineyard of the same name, at an altitude of 252 meters, facing west towards the Tyrrhenian Sea, on predominantly sandstone soils with little organic matter and a small amount of marl. Since 2012, the cuvée has been supplemented with Petit Verdot, a grape variety that ripens later than Cabernet Sauvignon and contributes to the full flavor and longevity of this superb Tuscan.
Depending on the ripeness of the grapes, the harvest takes place between mid-September for Merlot, late September and early October for Cabernet Sauvignon, and late October for Petit Verdot. After fermentation on the skins for 25 days at a controlled temperature, the wine is aged for 18 months in French oak barrels, 75 percent new and 25 percent used. This aging process is followed by another 18 months in the bottle.
The result of long maturation
The Saffredi from Fattoria Le Pupille erupts a deep ruby red in the glass. Its multifaceted bouquet reveals aromas of sandalwood, tobacco, blackberries, and currants, complemented by spices, vanilla, and plums. This red wine is intense on the palate, with a robust, structured flavor. It boasts fine and elegant tannins with abundant freshness. It is consistently juicy and has a very long finish. It is a true masterpiece!
