Located in the heart of Stellenbosch, Mooiplaas is a historic vineyard, rich in tradition and heritage. The Manor House, a magnificent example of "Dutch Cape" architecture dating from 1806, stands proudly as a national monument. The Sauvignon Blanc vines, situated 380 meters above sea level on the peaks of the Bottelary Hills, enjoy the cooling breezes of False Bay. These winds often bring a misty veil over the hills, earning the region the nickname Windhoek. The grapes are harvested in June, after which they are left to rest on their skins for 12 to 24 hours. After fermentation, the wine rests on its lees, benefiting from the yeast cells. After this careful aging, the wine is bottled, ready to be enjoyed.
