Only Sauvignon Blanc grapes from vineyards in Darling, Paarl, and Philadelphia are used to produce this spicy wine with grassy, asparagus, and tropical fruit flavors. No oak is used, and only a few days of lees aging ensures this white wine retains its fresh character.
The story of Nederburg
The story of Nederburg began in 1791 when German immigrant Philippus Wolvaart acquired 49 hectares of land in the Paarl Valley. He named his property Nederburgh, in honor of VOC commissioner Sebastiaan Cornelis Nederburgh.
The house's philosophy has always been that good wines are made in the vineyard, not just through complicated cellar technology. Andrea Freeborough's philosophy is best described by the phrase "respect the fruit." The goal is to get the most out of the grapes by using minimal and careful measures in wine production. The consistent implementation of this philosophy makes Nederburg one of the leading wineries in South Africa. No other South African producer has won so many national and international awards. The Paarl wine region is located approximately 50 kilometers from the coast, so it lacks cooling sea breezes and is relatively warm and dry. However, the Mediterranean climate provides perfect conditions for viticulture in Nederburg.
The grapes come from vineyards in the Darling, Paarl, and Philadelphia regions. The vines, planted between 1969 and 1998, are grown in the Clovelly, Hutton, Tukulu, and Oakleaf areas at altitudes between 80 and 120 meters above sea level.

The grapes were harvested both manually and mechanically in February. The fruit is finely crushed and gently pressed to extract excellent juice. After clarification, the juice is fermented for three weeks in temperature-controlled stainless steel tanks at 15 degrees Celsius. The vinification processes were strictly controlled to preserve the characteristic fruit flavors. The bouquet of this Sauvignon Blanc reveals aromas of passion fruit, green grass, floral notes, and citrus. The palate is fresh and fruity. The finish is pleasantly refreshing.
