Description
Pago de Cirsus Chardonnay Fermentado and Barrica DOP Bolandin, Spain
Pago de Cirsus Chardonnay Fermentado en Barrica is the premium, wood-fermented white wine from the Pago de Cirsus estate, within the exclusive Bolandin DOP in Navarra. What does Vino de Pago mean? It's the highest Spanish classification of origin, where an individual estate has complete control over the vineyard, vinification, and bottling, comparable to a single-estate designation. This Chardonnay distinguishes itself by being fully fermented and aged for 12 months in new French Allier oak barrels, a consistent choice that clearly positions it within the upper segment of wood-aged white wines.
Vineyards and region
The estate is located in Navarra within the DOP Bolandin, recognized as Vino de Pago and therefore one of the most select origins in Spain.
-
Origin status: DOP Bolandin with Vino de Pago classification, exclusive to this specific estate.
-
Location: Located in Navarra where the combination of continental and Mediterranean influences produces ripe fruit while retaining tension.
-
Harvest time: The grapes are harvested in early September, when optimum ripeness and fresh acidity come together.
-
Harvest Method: Night mechanical harvest to limit oxidation and maintain aromatic precision.
The focus on night harvesting underlines the house's precision: grapes arrive cool and retain their aromatic purity.
Vinification and maturation
The style is entirely determined by wood fermentation and long-term barrel maturation.
-
Fermentation: Alcoholic fermentation in new French oak barriques from Allier.
-
Wood maturation: 12 months maturation in the same new French barrels for maximum integration.
-
Structure: At 14.5% alcohol, the wine has enough power to support new oak without losing its balance.
Complete fermentation in new wood creates a creamy texture and layering, while controlled maturation ensures refined spiciness instead of dominant wood notes.
Grape composition
Chardonnay – DOP Bolandin
This wine is made from 100% Chardonnay from the estate itself. The grape combines ripe tropical fruit with enough natural freshness to harmoniously integrate 12 months of new oak.
Tasting notes and serving suggestions
In the glass, the wine displays a bright golden yellow color with vibrant reflections. The nose opens with ripe tropical fruit, complemented by notes of almond and refined vanilla from the new French oak. On the palate, it is full and creamy, yet fresh and taut thanks to its natural acidity. The finish is long and persistent, with an elegant oak note that remains beautifully integrated.
-
Serving temperature: Enjoy this Chardonnay between 8–10°C (46–50°F) to allow the creamy texture and subtle oak influence to develop to their full potential without suppressing the fruit.
-
Dishes: Pairs well with bluefish, shellfish, creamy rice dishes, grilled vegetables, white meat and mature cheeses.
