Hand harvest for Peacock Cabernet Sauvignon
The search ended on the cooler slopes of the Helderberg district on the Stellenbosch coast. The soils here provide abundant moisture and nutrients, giving the Cabernet a smooth, dark, berry character. The region is much cooler, allowing the grapes to ripen more slowly and develop balanced flavors and elegant tannins.
The grapes are harvested entirely by hand and then destemmed. The juice is then fermented naturally with wild yeasts, allowing the flavors of the vineyard to fully express themselves in the bottle. The skins and juice are blended through a combination of two punch-downs or two pump-overs per day. This Wild Ferment Cabernet Sauvignon is aged for nine months in oak barrels.
