Syrah is a grape variety that easily adapts to different regions and exudes a true sense of terroir. It's native to the northern Rhône Valley and is the 6th most widely planted variety in the world. It never disappoints and produces powerful wines. This Wild Ferment Syrah from Waterkloof's Peacock series is no exception. A remarkable glass of red wine with elegant, perfectly balanced flavors.

The Peacock series from South Africa's Waterkloof

The Syrah grapes for this red wine come from the slopes of Schapenberg Mountain in the Helderberg region on the Stellenbosch coast. This area is known for its cooler climate. Thanks to its location, cool winds blow through the vineyards, effectively compensating for the daytime heat. The deep red soils provide moisture and nutrients, giving the Syrah a smooth and spicy character. The Peacock series is named after the colorful peacocks found in and around the Waterkloof vineyards, hence the feather on the label.

20 months of wood aging for Peacock Wild Ferment Syrah

The grapes are harvested entirely by hand, after which the whole bunches are also sorted by hand. The grapes are then gravity-fed into open wooden fermenters. The juice is spontaneously fermented with wild yeasts, allowing the true flavors and character of the vineyard to shine through. To ensure soft tannins, the wine remains on the skins for approximately 30 days. After this, the Peacock Wild Ferment Syrah is aged for 20 months in French oak barrels. Thanks to the extended resting period, this is a balanced wine with beautiful aromas. The nose reveals abundant red fruit, light floral notes, and a hint of black and white pepper. The light, elegant flavors are perfectly balanced by the fresh acidity and well-rounded tannins. A wine to enjoy on its own or serve with an Italian dish.
