A Barbaresco with a lot of firmness
This Barbaresco from Pio Cesare is a true Nebbiolo wine. Thanks to the use of the Nebbiolo grape, this wine naturally develops a strong body, requiring a long aging process. The grapes are harvested only when perfectly ripe, which is usually around mid-October. The grapes are sourced almost exclusively from the Treiso municipality. The rest comes from vineyards in Barbaresco and San Rocco Seno d'Elvio. Blending these grapes creates a wine with greater complexity.
Fermentation takes place with optimal contact between the skins and the fermenting wine, giving the wine color and character. The grapes ferment at around 25 degrees Celsius and remain in contact with the fermenting wine for three to four weeks. It is then aged in barriques, some new French oak barrels and some new Slavonian barrels. The wine ages for 30 months, a deliberate choice. Thanks to the long aging, this Barbaresco gains complexity and reveals its beauty even more. And in this respect, Pio Cesare has more than succeeded.
The result of long-term wood aging
The result is a broad aroma with hints of smoky notes, herbs, tobacco, Maggi, truffle, and a hint of jam. Complex, with beautiful vanilla, this Pio Cesare Barbaresco offers a rich and complex palate, powerful yet elegant, pure, with beautiful vanilla thanks to the supporting wood, fine acidity, and lovely tannins.
