Winemaker Bruwer Raats is considered a leading specialist in this grape variety. Many winemakers are now venturing into the field, but for a fine Cabernet Franc, it's essential to have extensive knowledge of this grape. In this respect, the Raats winery maintains its leading position. The grapes are planted on soil with a particular type of weathered granite called Dolomite, from which this wine takes its name. This type of soil gives this red wine exceptional freshness, thanks to its beautiful acidity. The vines range in age from seven to twenty years. In any case, enough years to give the wine wonderful depth. For this reason, Cabernet Franc needs no additions: it's already incredibly strong!
 The harvest and taste of Dolomite Cabernet-Franc
 
The grapes are hand-sorted three times, crushed, and cold-soaked on their skins for five days. After fermentation, the grapes are basket-pressed and allowed to undergo malolactic fermentation in stainless steel tanks. The wine then ages for twelve to fourteen months before bottling. The final result is a delicious Cabernet Franc that is pure, fruity, and juicy. The Raats Dolomite Cabernet Franc is filled with dark, tart cherry aromas on the nose. On the palate, there's a herbaceous flavor, along with spice and dark berry flavors that linger on each sip. The finish is silky smooth. It pairs best with beef and pepper stews, grilled lamb, duck breast, and aged cheeses.
