This collaboration was driven by a shared love for the Saperavi grape, an indigenous Georgian variety, and a desire to produce wines of exceptional quality. With a deep appreciation for the qvevri fermentation technique, a method dating back to Georgia's oldest winemaking traditions, Taoba distinguishes itself through its dedication to authenticity and quality. The vineyards, planted with Saperavi grapes over 30 years old, benefit from the rich black slate soil and unique microclimate protected by the Caucasus Mountains.

Taoba Winery is located in the eastern part of Georgia, just an hour and a half's drive from the bustling capital, Tbilisi, in the Kakheti region. This location is not only geographically ideal but also historically the epicenter of Georgian wine production, where the art of winemaking is deeply rooted in the culture. The Saperavi vines, carefully selected and planted in the fertile black slate soils, are constantly tended to produce world-class wines. The climate of this region, with its cool nights and regulated rainfall due to the Caucasus Mountains, creates the perfect conditions for the grapes to ripen. Taoba's approach to winemaking, combining traditional techniques with modern knowledge, reflects a deep reverence for the land and its heritage.

Taoba's production methods pay tribute to Georgia's rich winemaking tradition while also allowing room for innovation. The careful selection of grapes, hand-picked from late September to early November, demonstrates the company's commitment to quality. A portion of the harvest is traditionally fermented in qvevri, large earthenware amphorae buried in the ground. This method is unique to Georgia and plays a vital role in producing distinctive, complex wines. This age-old technique, combined with modern fermentation in stainless steel tanks, allows Taoba to create wines with rich texture and depth.
