More than half Sauvignon Blanc, a third Chenin Blanc, and small portions of Chardonnay and Semillon make up the Waterkloof Circle of Life White. This white wine from South Africa has wonderfully fresh aromas of lime, grapefruit, and peach. Waterkloof Winery, located near False Bay, has been committed to organic viticulture for years. Initially, there was criticism that the quality of the wines suffered under the influence of natural viticulture. This is no longer the case. In the latest South African report in Robert Parker's Wine Advocate, Waterkloof shines with a score of 90 points. Discover the Waterkloof Circle of Life White, a fine white wine blend from the Cape, which is wonderfully accessible yet has a beautiful depth.

Biodynamic wines from Waterkloof

The Waterkloof winery is located on Schaapenberg in South Africa. It's owned by Paul Boutinot, who took it over in 2004. He invested in a beautiful winery to fulfill his dream of making biodynamic wines. The logo symbolizes the wind blowing through the vineyards. And that's precisely the most important aspect. The cooling air from False Bay ensures slow ripening, resulting in elegant, dry wines. Bunches are picked early in the morning, while still cool, which preserves the flavor. Juice is extracted from the grapes using whole-bunch presses in our modern basket press. This is the most delicate way to extract the juice. The grapes are vinified separately for seven months in oak barrels. The Chenin blanc, Sémillon, and Chardonnay were fermented in stainless steel vats during this period. Fermentation occurred spontaneously, without the addition of yeast. During the four-month aging period, the wine was aged in the fine depot. Blending and filtering then followed.

The complexity of Circle of Life white

This wine can be described as an intriguing, multi-layered wine. The Sauvignon Blanc aromas are prominent on the nose, with lovely notes of lime and gooseberry. Very well-integrated flavors on the palate, with a tight, mineral core and the creamy mid-palate of the Chenin Blanc, provide great complexity and a lingering finish. The Sauvignon Blanc gives the wine a delightful, crisp acidity.
