Winemaking in the Jura region isn't particularly popular. Yet, it's centuries old. The Domaine Baud winery is living proof. Founded in the mid-18th century, in 1742 to be precise, the winery was somewhat more renowned back then than it is today. For nine generations, excellent wines have been produced there in the characteristic oxidative style. This oxidative style, also used in wines like Sherry, is precisely why Jura has always been a small player. It's a style of wine you have to love and appreciate. The grapes used are also unconventional. No Chardonnay or Sauvignon Blanc here, but grapes like Savagnin, Poulsard, and Trousseau are planted. After harvest, the Savagnin grapes for this Baud I Un Savagnin Cotes du Jura are fermented in stainless steel tanks. The wine is then aged in large barrels holding a generous 228 liters. However, these are not filled completely, allowing a layer of yeast cells to form over the wine. After three years, the result is a unique style of wine that is highly oxidative yet rich in aromas.
