As we mentioned earlier, Primitivo ripens in southern Italy, with abundant sunshine and, more importantly, the cool sea breeze. This breeze provides refreshment during the ripening process, allowing the Primitivo grapes to mature slowly. A long aging period simply results in fuller-bodied grapes. These are all harvested by hand and rigorously selected, ensuring only the finest bunches are bottled. This Santufili Primitivo is then aged in oak in the Mocavero cellars. It is aged for approximately eight months in partially new oak, partially used, and the combination of the two defines the style of this red wine.
