While Barolo is probably the most famous wine made from the Nebbiolo grape, wines from neighboring Barbaresco have also acquired a great reputation. They are generally more refined and elegant in style. The wine is made from a selection of grapes from various vineyards in the villages of Treiso, Barbaresco, and Neive. The grapes grow on beautiful slopes, between 250 and 300 meters in altitude. Fermentation begins with selected yeasts at a temperature of 30-32ºC, with pumping over to maintain good contact between the skins and the fermenting wine. After fermenting for 10-12 days, the wine is transferred to barrels, partly in 2,000- and 3,000-liter casks. After a year, the wine is bottled. Despite its mature character, it has a beautiful elegance.
