Here, the grapes, primarily Grenache and Merlot, thrive under the warm Mediterranean sun and cool breezes from the nearby sea. The ripe grapes are hand-picked to ensure optimal ripeness. Once in the winery, the grapes are destemmed and lightly pressed to release their juices. They then undergo a cool maceration. Fermentation, using natural yeasts, takes place in stainless steel tanks at controlled temperatures to preserve the wine's freshness and fruitiness.
