Aaldering, a beautiful South African winery founded by the Dutch entrepreneurs Fons and Marianne Aaldering. This wonderful couple purchased 24 hectares of land in Stellenbosch in 2004, the heart of South African viticulture. They wanted to produce premium wines. The first vintage was launched in 2010 and was an immediate success. One of these successes was the Aaldering Cabernet Sauvignon Merlot. This delicious red wine has become an essential part of the Aaldering range.
Wood aging for the Aaldering Cabernet Merlot
The grape vines are now 15 years old and are steadily developing their character. This presents a new challenge for the winemaker every year, as both the plants and the grapes are constantly evolving. The warm climate, combined with the fresh breeze that blows through the vineyards, allows the grapes to ripen steadily, allowing them to mature perfectly. The Cabernet Sauvignon and Merlot grapes are harvested by hand at peak ripeness. The Aaldering family wants only the finest bunches to be used in their wine, requiring a rigorous selection process. After pressing, both the Cabernet Sauvignon and Merlot are aged in oak barrels for 27 months. Only then is the blend of 60% Cabernet Sauvignon and 40% Merlot made. The result is an elegant, classic Bordeaux blend from South Africa.
The aroma and taste of the red Cabernet Sauvignon Merlot
Upon pouring, we were immediately pleasantly surprised by the beautiful deep ruby red color with an almost black core. The aroma reveals a broad bouquet of blackcurrants, ripe red fruit, plums, dark chocolate, and a pleasant hint of vanilla and licorice. This translates into an elegant yet deliciously full flavor. Rich nuances of black and red fruit are perfectly balanced with hints of light spice, vanilla, and a touch of toast. The finish is round, soft, and intense with a pleasant dose of tannins for a delicate bite. This is undoubtedly one of our favorite Aaldering wines!
