- Location / origin: The Neusiedlersee wine-growing region in Burgenland, in eastern Austria.
- Climate & influences: The region is warm and relatively dry. The Pannonian influence ensures warm summers; wind helps the foliage dry quickly after rainfall.
- Vineyards: Zantho works with local winegrowing families and distributes the plantings across various soils and growth sites within the region.
The preparation keeps the fruit at the forefront.
- Fermentation: The grapes ferment in stainless steel tanks at 30–32 °C. During skin contact, color, aromas, and tannins are extracted into the wine.
- Aging: Stainless steel forms the basis of the maturation, supplemented by a portion of wood. This allows the wine to retain its juicy fruit while giving the structure time to develop.
